Alternatively, if you don't have a pot large enough to hold the brine and the bird, you can boil the gallon of water and ingredients in a smaller pot to create the brine, and then add that, with the other gallon of water into a brining bag (once it's cooled) and then put the turkey in the brining bag with the solution for the 24-48 hours.
